Out next week is this excellent book on fish by Hugo's chef and partner Pete Evans. Pete obviously has a passion for the wealth of our seas and this book is far more than a series of recipes for yet another celebrity chef. There are lost of pics at the start of each chapter that may give a frivolous feel or have you thinking that a chefýs life is one big fishing holiday. But the meat of this book is the introductory chapter about the state of our fishing industry and the need for sustainability of fishing in Australia (and the world for that matter). Recipes are sorted alphabetically by types of seafood and are easy to follow and relatively easy to succeed with for the home cook, and this is more important than many chef/authors seem to realize. A short chapter gives basic recipes for sauces and more that are used often throughout the preceding recipes. The book then gives information on most of Australiaýs fish, their quality and season, storage and best usage. The more understating of this helps get the best out of shopping for, and eating, fish throughout the year. The more we understand all food's seasonality, the better our eating, and the state of the world's food future will be. I, for one, would like to see more cookbooks like this one.
