Readers of these pages will know that Eat & Drink is an assertive proponent of seasonality, criticising the use of ingredients out of season because they will invariably be inferior, been produced in artifical conditions, or have travelled far to far. But the abundance of the season often means there is too much to consume when it is ripe and ready. So, the answer is to preserve. And these preserves - not just fruits but including sauces, jams, pickles, chutneys and relishes - in Sally Wise' terms is "capturing a season in a bottle".
Tomatoes may not be much chop outside their summer season but bottled sugos allow us the enjoy their suuny flavour in dishes in the depth of winter. And there are more than 100 recipes here that are tried and tested over years of experience.
