There is a broad range of styles but a general rule is that the Japanese soy sauces have a more refined flavour, and there are a number of organic versions, which should denote at least an attempt at higher quality. Kikkoman is a widely available brand, and its yellow label (with yellow lid) is a superior product. The Yamato sauce imported by Simon Johnson is an excellent sweet soy with refined character.
