REVIEW:
The restaurant Maze is sold to Australia as Gordon Ramsay. However it is, in reality, Ramsay Level 2 - a more relaxed, produce-driven, style of restaurant based on the creative skills of his London chef Jason Atherton. This shows off the recipes from Maze and, although based on ingredients available in the UK (fish particularly) can be easily adapted to Australia. Lovely dishes, well photographed to inspire,or perhaps visit the Melbourne restaurant.
