This book is as fascinating as it is encyclopedic: herbs and spices are described with their history, their cultivation, and their usage with some delightful recipes. Spice Notes demystifies some of the lesser known spices and "Herbie" Hemphill's obvious passion will instil a new interest in any cook to explore their use in their cooking. A delightful read. Named in the "Hot 100" list in US food & wine mag "Saveur" 2001.
